Then, we were a little cart parked off the street next to the Q58 bus stop. Now, we’re a NYC legend. The father: David, a hot head, the mastermind behind the flavors.The son: Jason (me), a chili head, the business guy who wanted to share our food with everyone. Opened in August 2018 by long time friends, Kuni and Robert, Bushniwa is a Japanese brasserie located in the vibrant neighborhood of Bushwick, Brooklyn. Chef Kuni is the inspiration behind the dishes at Bushniwa. For close to a decade, he apprenticed in the once legendary Tokyo Tsukiji and Ueno Fish Market, honing his skills from old masters and prominent sushi chefs. Arriving in the United States in the 90’s, he worked alongside the master sushi chef at Hatsuhanna and later became the executive chef at LAN and KAI.
