SEASONS OF THE FOX, a bed and breakfast, is an extensive restoration of a three-story mansion overlooking the leafy west edge of the Bethany College Campus.
Nestled among the high trees at the corner of Second and Swensson Streets, the home was designed in 1905 by Gustav N. Malm, an author, artist and entrepreneur who emigrated from Sweden in 1889 and is considered among Lindsborg’s founding fathers. It was built for the first director of the Messiah Chorus and Orchestra and later Malm’s daughter, Alba, lived there for years.
Breakfast is a three-course affair featuring fresh fruit, homemade breads and scones for the first course. The second course offerings include items such as sunflower soufflé or Swedish flan with breakfast meats. Berry clafouti or almond torte with Lingonberry tarn are the type of offerings for dessert as the third course. “Appeteasers of” crudités, spreads and crackers with house cider are offered in the afternoon. Evening sweets are also offered.
